3 Easy-Breezy Summer Recipes for the BBQ

Firing up your oven or stovetop in the summer can make an already-hot home even hotter! These simple and super tasty 5-ingredient BBQ recipes will take you from appetizer to dessert outdoors. And since it's market season, we picked our juicy peaches fresh from the downtown 104 Street marke​t with ice cream from Edmonton's hottest spot for a cool treat: Kind Ice Cream.

BBQ Grilled Shrimp

5-Ingredient Appetizer: BBQ Grilled Shrimp

 

Ingredients:

  • ½ cup melted butter
  • 3 tbs lemon juice
  • 2 tsp chili powder
  • 1 tsp ground ginger
  • 2 lbs uncooked shrimp

Instructions:

  1. In a bowl, combine melted butter, lemon juice, and spices. Set aside ¼ cup.
  2. Thread shrimp onto skewers.
  3. Grill shrimp covered over medium heat 3-5 minutes on each side, basting with butter mixture.
  4. Remove from grill when cooked (turns pink) and brush with remaining butter mixture.
  5. Serve!
Skillet Mac and Cheese

5-Ingredient Main Course: Skillet Mac and Cheese

Ingredients:

  • 2 cups of cooked elbow macaroni
  • 2 tbs butter
  • 2 tbs all-purpose flour
  • 1 ½ cups cream
  • ¾ pound of grated or cubed cheese

Instructions:

  1. Turn grill to medium heat.
  2. In a cast iron pan, melt butter.
  3. Stir in flour until smooth then whisk in cream.
  4. Bring to a boil and stir constantly until thickened.
  5. Reduce heat, stir in cheese until melted.
  6. Add macaroni and leave on the heat until heated through.
  7. Serve!
Grilled Peaches with Cinnamon Sugar

5-Ingredient Dessert: Grilled Peaches with Cinnamon Sugar Butter

 

Ingredients:

  • 4 ripe peaches
  • 1 tsp cinnamon
  • 1 tsp white sugar
  • 1 stick unsalted butter, room temperature
  • Canola oil

Instructions:

  1. Slice peaches.
  2. In a bowl, stir butter until smooth.
  3. Add cinnamon and sugar, mix.
  4. Turn grill to high heat.
  5. Brush peaches with oil and grill until golden brown.
  6. Remove from grill and top with butter mix.
  7. Serve on their own or with vanilla ice cream.
